Leek and Potato Soup

Delicious Start to a meal or a light lunch on it’s own.

  • 2 Large Leeks
  • 2 Large Potatoes
  • 1 litre Vegetable Stock
  • 2 tbspns Non-dairy Margarine (Stork)
  • 1/4 tspn salt and black pepper


  1. Slice the leeks finely I used a food processor and slicing blade for this
  2. Peel and grate the potato again I used my food processor and grating disc for this
  3. Melt the margarine in a large pot and sweat the leeks for 10 minutes until soft
  4. Reserve a few tablespoons of the leeks for garnish
  5. Add the potato and the stock plus seasoning
  6. Simmer for around 30 minutes
  7. Transfer to a blender and and blend until smooth
  8. Serve garnished with the reserved leeks
